灰汁 (aku, scum that rises when cooking)

Aku — the foam, scum, or bitter impurities that rise to the surface of a simmering pot, especially when cooking meat, beans, or vegetables. Skimming the 灰汁 is a standard step in Japanese (and other) cuisines.
